Never grill while the charcoal is still flaming. Wait until the coals are covered with gray ash (30 min approx) and spread into a single layer. To check cooking temperature, cautiously hold the palm of your hand above the coals at cooking height. Count the number of seconds that you can hold your hand in that position before the heat causes you to pull your hand away. That is approximately four seconds for medium heat. Don’t hesitate grilling with indirect heat where the coals are on one side of the burner box and you are cooking on the opposite side of the grill.
